Vanilla Dream Cookies

You ever just want the perfect simple sugar cookie bite?! This is the cookie for you! It's sweet, simple, chewy, and is great with your morning cup of coffee or nightly cup of tea!

Ooey gooey medjool dates

Shredded coconut

Small splash of vanilla extract or 1 whole vanilla bean

*Dates and coconut are a 1:1 ratio

**These are delicious with raw cashews or raw macadamia nuts too

Directions

Add all ingredients to a food processor and process until a sticky dough forms

Form the delicious mixture in cookie molds or form into balls

Add to the freezer for 1 hour so mixture can firm up into the perfect chewy cookie
