Pink Beet Mac & Cheese

Pink mac and cheese?! Yes, please!

Beets give this delish mac and cheese is beautiful natural pink color

Gluten free pasta of choice

1 c raw unsalted cashews

1 small raw beet (you can steam the beet, but it blends beautifully raw in a high speed blender)

2 cloves garlic

1 whole peeled lemon

Water to blend

Directions:

In a high speed blender blend all your sauce ingredients until smooth and creamy and in your desired thickness for your pasta

Boil your pasta, add your sauce, mix, and devour!

Simple, easy peasy, lemon squeezy! Yum!
