Mango Chili Coodles

What are coodles?! Only my latest obsession!

Coodles are noodles made from spiralized cucumbers just like zoodles are noodles made from spiralized zucchinis.

I believe coodles provide a light and refreshing bite when paired with my spicy sweet mango sauce.


Mango Chili Coodles

1 mango

1 avocado

1/2 lemon

5 cucumbers

Red pepper flakes

Black pepper

Apple cider vinegar


Directions

Spiralize the cucumbers into coodles using a spiraizer

Add all coodles to a strainer

*Special tip: I like to place a bowl on top of the coodles and weigh it down for about 20 minutes to help press the water out of the coodles. This will help your dish not be as watery!

In a high speed blender, add the mango, avocado, 1/2 of a peeled lemon, apple cider vinegar to taste, and seasoning to taste

Blend on high until the red pepper flakes start to disappear and the color begins to look more orangey red

Add sauce to coodles and get your hands in there to mix it all together

Devour!
