Gold Star Salad


My gold star salad filled with sweet mango, spicy jalapeño, creamy avocado, and crunchy radicchio truly has it all!


Gold Star Salad

2 boxes arugula

1 small head of radicchio thinly sliced

2 juicy mangoes diced

3 creamy avocados diced

2 jalapeños finely diced (use 1 and leave out the seeds for a less spicy option)

1 carrot peeled into thin strips

1 cucumber peeled into thin strips

1/2 purple onion thinly sliced

1 lemon juiced

3 Tbsp of apple cider vinegar

1 tsp black pepper

Dash of cumin

Dash of tumeric


Directions:

Add all ingredients into a large bowl and massage gently so everything incorporates into the lettuce and the avocado creates a creamy consistency

Allow to rest for 20 minutes in the fridge so all flavors can combine

Devour this creamy sweet delicious gold star salad!
