Rainbow Creamy Cashew Caesar Salad

Nothing beats a rainbow creamy cashew salad!

1 box mixed greens

1 box arugula

3 rainbow carrots thinly sliced into matchsticks

1 apple thinly sliced into matchsticks

1 red pepper thinly sliced into matchsticks

1 creamy avocado goodness

Dressing

3 oz raw unsalted cashews

1 whole unpeeled lemon

1 tsp black pepper

Water to thin to desired thickness

Directions

Add all dressing ingredients to a high speed blender and blend until smooth

Add to big bowl with all other ingredients and toss to combine

Top with creamy avocado and dig on in!
