Cozy Curry Coodles

This is a wonderful example of how you can take many of my recipes and change a small detail and give yourself a whole new flavor profile!
These coodles take the same recipe base as my mango chili coodles but instead of added red pepper flakes, you add curry power with a touch of cayenne pepper.
These taste absolutely incredible and leave you with a warm happy belly.
I love to add a spiralized beet on top because it lends a lovely sweet note to the spicy coodles and it's also such a beautiful contrast of color!
Cozy Curry Coodles
1 mango
1 avocado
1/2 lemon
5 cucumbers
Curry powder
Black pepper
Apple cider vinegar
Directions
Spiralize the cucumbers into coodles using a spiraizer
Add all coodles to a strainer
*Special tip: I like to place a bowl on top of the coodles and weigh it down for about 20 minutes to help press the water out of the coodles. This will help your dish not be as watery!
In a high speed blender, add the mango, avocado, 1/2 of a peeled lemon, apple cider vinegar to taste, and seasoning to taste
Blend on high until it all comes together in a thick creamy sauce
Add sauce to coodles and get your hands in there to mix it all together
Yum!
